Butters


Dried Tomato and Green Onion Butter

1/2 lb unsalted butter, softened
1/4 cup sun-dried tomatoes, oil-packed, drained and finely chopped
3 Tbs green onions, minced
1 tsp Univer Gourmet Garlic Cream
1 tsp Univer Goulash Cream Mild

1/2 tsp coarsely ground black pepper

 

In a small mixing bowl, mix butter, tomatoes, green onions, Garlic Cream, Goulash Cream Mild  and pepper until well mixed. Cover and refrigerate until needed. Serve over grilled vegetables and crusty bread.

Yield: about 1 ½ cups

Fresh Paprika Butter

 

1/2 lb unsalted butter, softened

1 Tbs Univer Sweet Ann

 

Mix softened butter with Sweet Ann.  Cover and refrigerate until needed. Serve with vegetables, pastas and meats.

Yield: about 1 cup

Garlic Butter

1/2 lb unsalted butter, softened

2 Tbs Univer Gourmet Garlic Cream

 

Mix softened butter with Gourmet Garlic Cream.  Cover and refrigerate until needed. Serve with vegetables, pastas, breads, and meats. Excellent on steak!

Yield: about 1 cup

Garlic Butter with Parsley and Cilantro

1/2 lb unsalted butter, softened
1 Tbs Univer Gourmet Garlic Cream
1 tsp Univer Goulash Cream Mild
2 Tbs parsley, finely chopped
1 Tbs cilantro, finely chopped

1/2 tsp freshly ground black pepper

 

Mix softened butter with Garlic Cream, Goulash Cream Mild, parsley, cilantro and pepper. Cover and refrigerate until needed. Wonderful stirred into mashed potatoes.

Yield: about 1 ¼ cups

Green Onion and Cilantro Butter

1/2 lb unsalted butter, softened
1/2 tsp Univer Red Gold Hot
2 Tbs green onion, finely chopped
1 Tbs fresh cilantro, finely chopped

1 Tbs fresh parsley, finely chopped

 

Mix softened butter with Red Gold Hot, green onions, cilantro and parsley. Cover and refrigerate until needed.

Yield: about 1 ¼ cups

Preparation time: 10 minutes

Horseradish Butter

1/2 lb unsalted butter, softened

2 Tbs Univer Horseradish with Vinegar

 

Mix softened butter with Horseradish with Vinegar.  Cover and refrigerate until needed. Serve with vegetables, pastas, potatoes, breads, and meats. Delicious on fresh corn and steaks.

Yield: about 1 cup

Hot and Spicy Butter

1/2 lb unsalted butter, softened
2 tsp Univer Strong Steven
1 tsp lime zest

1 tsp lime juice

 

Mix softened butter with Strong Steven, lime zest and lime juice.  Cover and refrigerate until needed. Serve with vegetables, pastas and meats.

Yield: about 1 cup

1/2 lb unsalted butter, softened

Restaurant Butter

1/2 lb unsalted butter, softened
1 Tbs Univer Goulash Cream Mild
1/2 tsp white pepper
1 Tbs fresh parsley, finely chopped

1 Tbs lemon juice

 

Mix softened butter with Goulash Cream Mild, pepper, parsley and lemon juice. Cover and refrigerate until needed. Serve with seafood, vegetables and meats.

Yield: about 1 cup

Rosemary and Garlic Pepper Butter

1/2 lb unsalted butter, softened
2 Tbs fresh rosemary, finely chopped
1 Tbs Univer Gourmet Garlic Cream
2 Tbs freshly ground black pepper

1/2 tsp salt

 

Mix softened butter with Garlic Cream, rosemary, pepper and salt. Cover and refrigerate until needed. Great on meat and seafood.

Dressings


Capers and Olive Dressing

1/2 cup Univer Mayonnaise
1/2 cup plain yogurt
1 tsp Univer Gourmet Garlic Cream
1 Tbs capers, finely chopped

1 Tbs green olives, finely chopped

 

Mix together all ingredients; cover and refrigerate until needed. Use as a base for stuffed eggs.

Yield: about 1 cup

Creamy Orange Dressing with Horseradish


1/2 cup plain yogurt
1/2 cup Univer Mayonnaise
1/4 cup Univer Horseradish with Vinegar

2 tsp orange zest
2 Tbs orange juice

salt and pepper to taste

 

Blend all ingredients together; cover and refrigerate until needed.

Yield: about 1 ½ cups

Creamy Red Gold Dressing

1 cup Univer Mayonnaise
1 Tbs Univer Red Gold Mild

1 tsp Univer Gourmet Garlic Cream

Garlic Ranch Dressing

A great dip for Strong Steven Chicken Wings, too.

1 cup ranch salad dressing

1 Tbs Univer Gourmet Garlic Cream

 

In a small mixing bowl, whisk together the ranch dressing and Garlic Cream.  Cover and refrigerate until ready to serve.

Yield: about 1 cup

Garlic-Oregano Marinade for Chicken

1 cup extra virgin olive oil
2 Tbs vinegar
2 Tbs honey
1 Tbs fresh lemon juice
1 Tbs Univer Strong Steven
1 Tbs Univer Gourmet Garlic Cream
1/4 cup fresh oregano, finely chopped

1/2 tsp black pepper

 

Whisk together all ingredients and pour over chicken; turn to coat. Cover and refrigerate until ready to cook, up to 4 hours; drain chicken and discard marinade. Prepare chicken as desired.

Yield: about 1 ½ cups

Green Chile Dressing

1 cup Univer Mayonnaise
1 Tbs lime juice
1 Tbs hot green chilies, finely chopped
1 Tbs cilantro, finely chopped

1  small green onion,  thinly sliced

 

In a small mixing bowl, whisk together Mayonnaise, lime juice, chilies, cilantro and green onion.  Cover and refrigerate until ready to serve.

Yield: about 1 ½ cups

Preparation time: 10 minutes

Jalapeno Mayonnaise

1/2 cup Univer Mayonnaise
1/2 cup sour cream
1 Tbs jalapeño pepper, finely chopped

1/2 tsp ground cumin seed

 

Blend Mayonnaise with sour cream, jalapeño, and cumin. Cover and refrigerate until needed.

Yield: about 1 cup

Preparation time: 10 minutes

Lime Mayonnaise

1/2 cup Univer Mayonnaise
1 Tbs lime juice

1 tsp Univer Goulash Cream Hot

 

Combine all ingredients; cover and refrigerate until needed. Excellent as a dipping sauce for shrimp.

Yield: about ½ cup

Mild Chile Mayonnaise

1/2 cup Univer Mayonnaise
1/2 cup sour cream
1/4 cup diced mild green chilies

1/2 tsp ground cumin seed

salt and pepper to taste

 

Blend Mayonnaise with sour cream, green chilies and cumin. Season to taste with salt and pepper. Cover and refrigerate until needed. Yummy with chicken salad.

Yield: about 1 ¼ cups

Preparation time: 10 minutes

Note: Any canned goods that have become the size or shape of a basketball should be disposed of. Carefully.

Mustard Dressing

1/2 cup Univer Mayonnaise
2 Tbs Univer Mustard
1 Tbs green onions, finely chopped
2 Tbs parsley, finely chopped

Salt and pepper to taste

 

Blend all ingredients together. Cover and refrigerate until needed.

Yield: about 1 cup

Pesto Mayonnaise

1 cup basil leaves, lightly packed
1 tsp Univer Gourmet Garlic Cream
2 Tbs grated Parmesan cheese
1 tsp Univer Goulash Cream Mild
1/4 cup extra virgin olive oil
1/2 cup Univer Mayonnaise

salt and pepper, to taste

 

In a food processor, process the basil, Garlic Cream, Parmesan cheese, Goulash Cream Mild and olive oil until smooth. In a bowl, combine the basil mixture with the Mayonnaise; season with salt and pepper to taste. Cover and refrigerate until ready to serve.

Yield: about 1 ¼ cups

Salsa Mayonnaise

1 cup Univer Mayonnaise
1 Tbs Univer Goulash Cream Mild
1/2 cup salsa, mild or medium, drained
1 Tbs cilantro, chopped

freshly-ground black pepper, to taste

 

In a small mixing bowl, combine Mayonnaise and Goulash Cream Mild. Stir in salsa and cilantro.  Season with pepper.  Cover and refrigerate until ready to serve. Good with fresh green salads.

Yield: about 1 ½ cups

Sandwich Spread

Add some Univer Mustard and pickle relish to garnish your favorite hot dog!

1/2 cup Univer Mayonnaise
2 Tbs Univer Horseradish with Vinegar
2 tsp good quality ketchup
1 tsp Univer Gourmet Garlic Cream
1/2 tsp Univer Sweet Ann
1/2 tsp onion powder

pinch freshly ground black pepper

 

In a small mixing bowl, whisk together Mayonnaise, Horseradish with Vinegar, ketchup, Garlic Cream, Sweet Ann, onion powder and pepper.  Mix until well blended.  Cover and refrigerate until ready to serve.

Yield: about ¾ cups

Preparation time: 5 minutes

Spicy Red Mayonnaise

1/2 cup Univer Mayonnaise
1 1/2 Tbs salsa, medium heat
1/2 tsp Worcestershire sauce

 

In a small bowl, whisk together Mayonnaise, salsa and Worcestershire sauce.  Cover and chill until ready to serve. Great with crab cakes or grilled shrimp.

Yield: about a ½ cup

Sweet Ann Dressing

1/2 cup Univer Mayonnaise
1/4 cup Univer Sweet Ann
1/2 cup tomato, seeded and chopped
2 Tbs green onions, chopped
1 Tbs fresh parsley, chopped

salt and pepper to taste

 

Mix all ingredients in a small bowl. Cover and refrigerate until needed.


Yield: about 1 ½ cups

Sauces 


Artichoke Dipping Sauce

1/2 cup Univer Mayonnaise
1 Tbs Univer Horseradish with Mayonnaise
1 tsp Univer Gourmet Garlic Cream
1 tsp Univer Mustard
1 tsp lemon juice
dash Worcestershire sauce

pinch black pepper

 

Whisk together all ingredients. Cover and keep refrigerated until ready to serve.


Yield: about ½ cup

Preparation time: 5 minutes

Bill's Zookie Sauce

Try this on Hungarian meatballs or as a side for other meat dishes.

1 cup Univer Mayonnaise
1/4 cup Univer Mustard
1/4 cup grated Parmesan cheese
1 tsp Univer Gourmet Garlic Cream

salt and pepper to taste

 

In a small mixing bowl, whisk together all ingredients.  Cover and chill until needed.


Yield: about 1 ½ cups

Seafood Cocktail Sauce


1/2 cup good quality ketchup
2 Tbs Univer Horseradish with Vinegar
1 tsp Univer Gourmet Garlic Cream
1 tsp onion powder
1 tsp Worcestershire sauce

1 Tbs parsley, finely chopped

 

Blend all ingredients together; cover and refrigerate until needed.


Yield: about ¾ cup

Creamy Horseradish Sauce for Meat

1 cup Univer Mayonnaise
1/2 cup Univer Horseradish with Vinegar
1/2 cup sour cream
1 Tbs Univer Mustard
1/2 tsp salt

1/4 tsp white pepper

 

In a medium mixing bowl, whisk together Mayonnaise, Horseradish with Vinegar and sour cream.  Add Mustard, salt and pepper. Whisk to combine.  Store covered in refrigerator.  Bring to room temperature to serve.


Yield: about 2 cups

Creamy Seafood Sauce

1/2 cup Univer Mayonnaise
1/2 cup sour cream
1  ripe avocado, peeled and mashed
2 tsp lemon juice
1 tsp Univer Red Gold Hot
1 tsp Univer Gourmet Garlic Cream

salt and pepper to taste

 

Blend Mayonnaise and sour cream. Add in the avocado, mixing well. Add remaining ingredients and mix again. Cover and refrigerate until needed. Very tasty on seafood and baked potatoes, too.


Yield: about 2 cups

Note: It drives the pizza guy crazy when you give him your address and say, “Just surprise me!” and hang up.

Dried Cranberry and Jalapeno Relish

1 cup dried cranberries
1/2 cup orange juice
1/2 cup red onion, chopped
1/3 cup fresh cilantro, finely chopped
1/4 cup freshly squeezed lime juice
1 Tbs Univer Sweet Ann
1 tsp Univer Gourmet Garlic Cream
1/2 tsp ground cumin seed

1  jalapeno pepper, seeded and finely chopped

 

In a mixing bowl, combine all ingredients. Cover and refrigerate at least 2 hours before serving. Great with chicken and pork.


Yield: about 2 cups

Herb Vegetable Sauce

1/2 cup Univer Mayonnaise
3 Tbs parsley, finely chopped
2  green onions, finely chopped
1 Tbs fresh tarragon, finely chopped

salt and pepper to taste

 

Blend all ingredients together; cover and refrigerate until needed. Nice over steamy cooked vegetables.


Yield: about 1 cup

Horseradish Mustard Sauce

1 cup Univer Mayonnaise
3 Tbs Univer Mustard
2 Tbs Univer Horseradish with Vinegar
1 tsp Worcestershire sauce

Tartar Sauce

1/2 cup Univer Mayonnaise
1/2 cup sour cream
1/4 cup Univer Horseradish with Vinegar
1/4 cup red onion, finely chopped
1 1/2 Tbs dill pickle relish
3 tsp capers, finely chopped

salt and pepper to taste

 

Blend all ingredients well. Cover and refrigerate until needed.
